Bush’s® Marry Me Butter Beans
One bite of this lovely Italian supper, and you’ll be ready to utter those two little words that everyone dreams of saying one day: Butter Beans.

Ingredients
- ½ cup onion, diced
- 2 tsp garlic, minced
- 1 Tbsp olive oil
- 2 Tbsp tomato paste
- Pinch of red pepper flakes
- ¼ tsp oregano
- ⅓ cup sun-dried tomatoes, chopped
- 1 cup vegetable broth
- 2 (16 oz) cans Bush’s® Butter Beans, drained
- 2 cups baby spinach
- ½ cup heavy cream
- ¼ cup grated parmesan cheese
- ½ cup mozzarella cheese, shredded
Optional Toppings
Chopped basil
Cooking Instructions
- 1SAUTE
Sauté onion and garlic in olive oil over medium heat 3-4 minutes or until onions are soft.
- 2COOK
Add tomato paste and cook 3-4 minutes or until paste darkens in color.
- 3ADD
Add red pepper flakes, oregano, sun-dried tomatoes and vegetable broth.
- 4STIR
Stir in beans and spinach.
- 5SIMMER
Simmer 5-7 minutes or until desired consistency.
- 6STIR
Stir in heavy cream and parmesan cheese. Remove from heat.
- 7TOP
Top with mozzarella cheese and basil, if desired.
- 8TIPS
Before adding basil, pop oven safe skillet in oven under the broiler 1-2 minutes to get melted bubbly cheese.
