George's Chili Gang Homestyle Chili

This is *literally* the best chili in the world! At least, that’s what the judges at the 2018 World Championship Chili Cook-offs® thought when they awarded it first place. Made by self-proclaimed chilihead George Rives, it’s a fairly simple but bold recipe that’s been fine-tuned to chili perfection. Even the toughest judges at your dinner table will be coming back for seconds.

Ingredients

Serves:
  • 3 lb Ground Beef
  • 1/2 lb Mild Pork Sausage
  • 1 can (27 oz) Bush’s® Pinto Chili Beans
  • 2 cans (14 oz) Chicken Broth
  • 1 can (14 oz) Beef Broth
  • 1 can (8 oz) Tomato Sauce
  • 1 can (14 oz) Diced Tomatoes
  • 1 can (8 oz) Hot Tomato Sauce
  • 1 can (4 oz) Whole Green Chile, Chopped Finely
  • 1 tbsp Oil
  • 1 tsp Tabasco Sauce
  • 2 Small Onions
  • 2 Fresh Jalapeno Peppers
  • 1 ½ Tbsp arrowroot, mix with 2 Tbsp water (As Needed)
  • Spice Mix
  • 10 Tbsp chili powder
  • 1 Tbsp cumin powder
  • 1 tsp garlic powder
  • 2 tsp cayenne pepper
  • 1 Tbsp brown sugar
  • Meat Spices
  • 1 tsp white pepper
  • 1 tsp MSG

Cooking Instructions

  1. 1
    BROWN

    Brown sausage; then add 1 ½ LB ground beef, meat spices and oil.

    DRAIN

    Brown and drain. This is the first batch of meat.

      ADD

      Add chopped onions, jalapenos, green chilis, tomato sauce, beef broth, chicken broth and ¾ of the spice mix to chili pot. Bring to a boil then add first batch of meat. Continue cooking.

      BROWN

      Brown second batch of meat (don’t forget to use meat spices). Drain and add to chili pot.

      SIMMER

      Simmer for 2 hours.

        ADD

        Add Tabasco, brown sugar, remaining chili spices, hot tomato sauce and diced tomatoes. Cook for 30 minutes or until meat is tender.

        ADJUST

        Adjust chili gravy with additional chicken broth or arrowroot, as necessary.

        Add beans 15 minutes before turn in. Add salt to taste.
