Mediterranean Farro & Salmon Salad
Bush’s Chickpeas give this hearty farro & salmon salad an extra protein boost, making it a perfect fresh lunch to keep you going through the afternoon.

Ingredients
- Mediterranean Farro & Salmon Salad
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon sugar
- 1 can Bush’s Chickpeas, drained and rinsed
- 3 cups cooked farro
- 3 cups baby spinach
- 1 cup baby arugula
- 1/2 English cucumber, thinly sliced
- 1/4 cup thinly sliced red onions
- 2 cups cherry tomatoes, halved
- 2 tablespoons fresh dill
- 12 ounces roasted salmon, broken into large flakes
- Lemon wedges, for serving
Cooking Instructions

Whisk together olive oil, lemon juice, salt, pepper, and sugar in a large bowl.
- 2TOSS
Add chickpeas, farro, spinach, arugula, cucumber, red onions, cherry tomatoes and dill and toss to combine.
- 3TOP
Portion into 4 plates and top with salmon and serve with lemon wedges.
