Dianne's Fairy Dust Chili
Don’t let the name fool you—this chili packs a punch! In fact, it’s one of the best chili recipes in the world, winning first place in the 2021 World Championship Chili Cook-offs®. Made by Dianne Lewis, whose been dishing out the deliciousness since entering the world of competitive chili-making in 1982, this bold and flavorful recipe takes chili to the champion level.

Ingredients
- 2 lb 80% Lean/20% Fat Ground Chuck
- 2 tbsp Canola Oil
- 1 - 14.5 oz can Beef Broth
- 1 - 14.5 oz can Chicken Broth
- 1 - 8 oz can Tomato Sauce
- First Spice Mix
- 2 tsp Onion Granules
- 1.5 tsp Garlic Granules
- 1 tbsp Beef Bouillon Granules
- 1 tbsp Chicken Bouillon Granules
- 2 tbsp San Antonio Original (Mild Bill’s Spices)
- 2 tsp Dixon (Mild Bill’s Spices)
- 1/8 tsp Cayenne Pepper
- 1/8 tsp Black Pepper
- Second Spice Mix
- 1 tbsp San Antonio Original (Mild Bill’s Spices)
- 2 tbsp Cowtown (Mild Bill’s Spices)
- 1.5 tbsp Cumin
- 1/2 tsp Granulated Garlic
- 1/8 tsp Brown Sugar
- 1 packet of Sazon Goya Seasoning
- 1 can Bush’s Kidney Chili Beans in Mild Sauce
- 1 can Bush’s Pinto Chili Beans in Mild Sauce
- Hot Sauce
Optional Toppings
Sour Cream, Cheese, Raddish, Jalapeno
Cooking Instructions
- 1BROWN
In a 3- or 4-quart pot, brown ground chuck in the canola oil.
- 2DRAIN
Drain grease and set meat aside.
- 3ADD
Wipe out pot and add browned meat, beef broth, and chicken broth. Simmer for 45 minutes.
- 4STRAIN
Remove meat and strain grease from broth.
- 5ADD
Add strained broth and meat back to pot. Add tomato sauce and first spice mix.
- 6SIMMER
Cook on medium low. After 30 minutes, turn off heat and break up meat to about fingertip size.
- 7ADD
Turn heat back on to low and add second spice mix and Bush’s Chili Beans. Simmer for 20 minutes.
- 8FINISH
Before serving, add 3 dashes of hot sauce, salt to taste, and more cayenne pepper for heat if needed.
