Bush’s® Dense Bean Sub In A Tub
All the best flavors of an Italian sub, packed in a tub full of beans! Enjoy colorful veggies and a bright dressing when you bite into this Dense Bean Sub In A Tub featuring Bush’s® Chick Peas, Bush’s® Cannellini Beans, and Bush’s® Light Red Kidney Beans!

Ingredients
- Sun-Dried Tomato Vinaigrette
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 tsp spicy brown mustard
- ⅓ cup sun-dried tomatoes in oil
- 1 tsp garlic, minced
- 2 tsp honey
- 1 Tbsp fresh oregano
- 1 tsp salt
- ¼ tsp black pepper
- Salad
- 1 can (16 oz) Bush’s® Chick Peas, drained and rinsed
- 1 can (15.5 oz) Bush’s® Cannellini Beans, drained and rinsed
- 1 can (16 oz) Bush’s® Light Red Kidney Beans, drained and rinsed
- 1 cucumber, seeded and diced
- ½ cup Kalamata olives, pitted and halved
- ½ cup red pepper, diced
- ½ cup red onion, diced
- ¼ cup pepperoncini, sliced
- 4 oz fresh mozzarella pearls
- ¼ cup basil, cut into thin strips (chiffonade)
- 1 recipe sun-dried tomato vinaigrette
- Optional: 2 oz pepperoni, diced
- Optional: 2 oz Italian dry salami, diced
Cooking Instructions
- 1BLEND
Blend all vinaigrette ingredients together in a food processor or blender until well combined. Set aside.
- 2COMBINE
Combine all salad ingredients. Add optional ingredients, as desired. Toss with dressing.
