Chopped Italian Salad with Bush’s® Chick Peas
This Italian salad features a tangy vinaigrette dressing tossed with a variety of chopped veggies, Bush’s® Chick Peas, salami, and mozzarella.

Ingredients
- Dressing
- 1 small shallot, finely chopped
- 1 Tbsp yellow mustard
- 2 Tbsp red wine vinegar
- 1/4 cup olive oil
- 1 tsp kosher salt
- 1 tsp black pepper
- Salad Ingredients
- 1 head romaine lettuce, cut into bite sized pieces
- 1 head radicchio, cut into bite sized pieces
- 4 ribs celery, thinly sliced
- 2 carrots, peeled and cut into thin coins
- 1 cup giardiniera, drained and cut into bite-sized pieces
- 4 oz sliced salami, quartered
- 4 oz baby mozzarella balls, halved
- 1 can (16 oz) Bush’s® Chick Peas, drained and rinsed
Optional Toppings
Pepperoncinis, for serving
Cooking Instructions
- 1WHISK
Whisk together shallot, mustard, vinegar, olive oil, salt and pepper in a small bowl.
- 2COMBINE
Combine lettuce, radicchio, celery, carrots, giardiniera, salami, mozzarella balls, and chick peas in a large bowl.
- 3TOSS
Add dressing and toss to combine. Serve immediately with pepperoncinis (optional).
