Chili Walking Tacos
Bush's® flavorful chili beans put a great twist on walking tacos. Chili on corn chips with cheese, sour cream, guacamole and other great toppings – enjoy the flavor fiesta wherever you go.

Ingredients
- Chili Ingredients
- 2 tablespoons vegetable oil
- 1 pound lean ground beef
- 1 medium yellow onion, finely chopped
- 1 green bell pepper, cored and finely chopped
- Salt and pepper
- 1 tablespoon chili powder
- 1/4 cup tomato paste
- 1 (14.5oz) can diced tomatoes
- 2 cans Bush’s Chili Magic® Classic Homestyle

- 1 large bag corn chips
- 1 pint sour cream
- 1 pint guacamole
- 1 pint pico de gallo
- 2 cups shredded cheddar cheese
Cooking Instructions

Heat vegetable oil in a large, heavy-bottom pot over medium-high. Add ground beef and cook, breaking up the pieces with a wooden spoon, until browned, 8 to 10 minutes. Add onion and green pepper and cook until the vegetables have softened and the onions are translucent, 5 to 7 minutes.

Season with 2 teaspoons salt and 1 teaspoon pepper and add chili powder and cook, stirring frequently, until the chili powder is slightly toasted, about 30 seconds. Add tomato paste and cook, stirring to coat the meat and vegetables, until the tomato paste is slightly rusty in color, 1 to 2 minutes. Add diced tomatoes and Bush’s Chili Magic® Classic Homestyle, stir to coat, and bring to a gentle simmer over medium-low heat. Cook until the diced tomatoes have softened slightly and the flavors have melded, 12 to 15 minutes.
- 3ASSEMBLE
Divide corn chips into 10 to 12 small serving bags. Top with 1 large scoop of chili and add sour cream, guacamole, pico de gallo, and shredded cheese to taste.
