This lighter take on pinwheels uses refreshing cucumber slices instead of tortillas, and a three-step roasted red pepper hummus you can make right before you assemble the rollups.

Ingredients

  • 1 pouch BUSH'S® Roasted Red Pepper Hummus Made Easy
  • 1 can (16 oz.) BUSH'S® Garbanzo Beans, drained and rinsed
  • 2 cucumbers, thinly sliced long ways (we recommend using a vegetable peeler)
  • 1 red bell pepper, thinly sliced
  • 1 package toothpicks
  • Optional:
  • 1 package turkey or ham, thinly sliced

Directions

  1. Drain and rinse beans and add to food processor.
  2. Add contents of Roasted Red Pepper Hummus Made Easy pouch. Blend to desired consistency.
  3. Spread hummus on sliced cucumber; place thin slices of red pepper and turkey/ham (optional) on top of the hummus.
  4. Roll cucumber from one end and hold together with a toothpick.
