Southern Barbecue Bowl
Get your cornbread ready, because this savory barbecue bowl, made with Bush’s® Sidekicks Slow-Cooked N’ Savory™ Pinto Beans and all your favorite Southern fixins’, is sure to satisfy. Don’t forget to drizzle it with barbecue sauce!

Ingredients
- Southern Barbecue Bowl
- 3 medium sweet potatoes, cut into 1-inch pieces
- 2 Tbsp vegetable oil
- Salt and pepper
- 3 cups coleslaw mix
- 2 Tbsp mayonnaise
- 1 Tbsp apple cider vinegar
- 1 can (15 oz) Bush’s® Slow-Cooked N’Savory™ Pinto Beans
- 1 lb pulled pork
- 1/2 small red onion, thinly sliced
- 2/3 cup bread and butter pickle chips
- Barbecue sauce, for serving
Cooking Instructions
- 1PREHEAT
Preheat oven to 425 degrees F.
- 2ROAST
Toss sweet potatoes with vegetable oil and 1 tsp salt and roast on a baking sheet in oven until sweet potatoes are browned on all sides and softened, 30-35 minutes. Remove from oven and let cool slightly.
- 3TOSS
Meanwhile, in a large bowl, toss coleslaw mix with mayonnaise, apple cider vinegar, 1 tsp salt, and 1/2 tsp ground black pepper. Warm pinto beans in a saucepan.
- 4ASSEMBLE
To assemble, divide roasted sweet potato among 4 bowls. Top with pulled pork, coleslaw, pinto beans, red onion slices, and pickle chips and serve with barbecue sauce.
