1 tablespoon vegetable oil
¼ onion, chopped
1 sirloin steak (8 ozs.), sliced
1-2 serrano chiles finely chopped
1 tomato, chopped and divided
1 can (15.8 oz.) BUSH'S BEST Black Beans drained and rinsed
8 chalupa shells or four-inch tortillas
4 cups shredded lettuce
2 cups Queso Anejo*
1 avocado, peeled, pitted and sliced
Preheat oven to 325ºF. Heat oil in medium skillet
and sauté onion for 2-3 minutes until softened. Add steak and cook over medium heat until desired done-ness. Add chiles and half of tomato and cook until softened. Stir in beans and cook until heated through. Place tortillas on baking sheet and heat in oven for two to three minutes or until crisp. Spread bean mixture on tortillas. Top with lettuce,remaining tomato cheese and avocado slices.Serve with a side of Garlic Pinto Beans. May substitute shredded
