Ingredients

  • 1 can (16 oz) BUSH'S® Kidney Beans, drained
  • 1 Tbsp olive oil
  • 2 slices bacon, cut into 1-inch pieces
  • 4 lbs trimmed beef cubes or brisket
  • 2 cloves garlic, chopped
  • 1 onion, sliced into wedges and separated
  • 1 Tbsp jalapeño pepper, chopped
  • 1 small green pepper, diced
  • 1 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 cup chicken stock
  • 1/2 lime, juiced

Directions

  1. Heat oil in a 10-inch skillet over medium-high heat. Add bacon and cook 2 minutes. Add beef and brown with garlic, onion, jalapeño and green pepper.
  2. Combine skillet mixture (with pan juices), seasonings and tomatoes in slow cooker. Top with beans, chicken stock and lime juice.
  3. Cover and cook 4 hours on low.
