Fajitas & Burritos My favorite dish to make quickly is a quesadilla. It's made with only six ingredients, including refried beans, cheese and cumin. Top it with salsa and sour cream, and you have an easy, healthy meal.
Need something even quicker? Try a burrito. Black beans, chicken, cheese and spices are all rolled up into a burrito-sized tortilla. The best part: It's ready in just over 20 minutes.
Salads & Salsas Have a can of cannellini beans on hand? Combine it with tuna and sliced onion for a quick, healthy salad that's perfect for lunch.
If you have extra time to chop, or a second set of hands, make a simple black bean and pineapple salsa. Pair this with some crusty bread, and you have a filling meal that doesn't even involve the stove.
Salsa is also my answer when I have friends coming over. Make it ahead of time, and serve it with tortilla chips when the guests arrive. (You could also use this to top the quesadilla.)
